Here is a delicious banana cake recipe that is perfect for when have ripe bananas laying around that you don't know what to do with. This recipe has a delicious moist inside with a nice crunchy top. This goes so well with our creamy hot chocolate.
Time: 1 hr 10 min Serves: 8 people
Ingredients
1 1/2 cups of flour
1/2 cup white sugar (plus a little extra to sprinkle on top)
1/2 packed cup brown sugar
1 tsp baking powder
1 tsp baking soda
1/2 cup of unsalted butter
1 cup of milk
3 eggs
1 cup of mashed ripe banana (3 medium-sized bananas)
1 tsp vanilla extract
Oats to sprinkle on top
Directions
Step 1
Preheat the oven to 350°F (180°C). Grease a circular cake pan.
Step 2
Using a handheld mixer, In a large bowl, cream the butter, and sugars for 5 minutes. Once creamed, add in the vanilla extract and eggs, and whisk it again. Lastly, add in the mashed banana.
Step 3
In a separate medium-sized bowl, mix the flour, baking powder, and baking soda.
Step 4
Add a little bit of the flour to the creamed butter mixture, whisk it, and add some of the milk, to the mixture and whisk it again. Continue this until you have added all the flour and the milk.
Step 5
Pour the batter into the circular cake pan and sprinkle sugar and oats on top. (if you don't want a crunchy top, don't sprinkle the sugar or oats on top.)
Step 6
Bake the cake for 45 - 55 minutes, or until it is poked with a toothpick and comes out clean. Once allow the cake to cool in the pan for 5 minutes, then remove the cake from the pan and place it on a cooling rack for it to completely cool. Serve and enjoy.
