Ingredients
2 cups oats
1 cup unsalted butter
⅔ cup white sugar
⅓ cup brown sugar
2 cups flour
1 tsp baking soda
2 tsp cinnamon
1 tsp vanilla extract
2 large eggs
2 ripe bananas, mashed
OPTIONAL: melted chocolate and banana slices to serve.
Directions
Step 1
In a medium bowl, cream the butter and sugars. Then, mix in the eggs, vanilla extract and mashed bananas using an electric mixer. Using a wooden spoon, mix in the flour, baking soda, oats, and cinnamon.

Cover and chill the cookie dough for one hour.
Step 3
Preheat the oven to 375°F (190°C) and grease the cookie sheets.
Step 4
Roll the dough into medium-sized balls and place them on the greased baking sheet. Flatten each cookie with a fork.

Bake the cookies for 10 minutes. Allow the cookies to cool on a baking sheet for 10 minutes and then leave them to cool on a cooling rack for 10 - 15 minutes.

Drizzle the melted chocolate over the cookies and top with a banana slice. Allow the chocolate to set.
