Ingredients
¼ cup granulated sugar
¼ cup brown sugar
½ cup salted butter, melted
1 large egg
1 tsp vanilla extract
1 ¼ cups all-purpose flour
½ tsp baking soda
1½ tbsp cocoa powder
Directions
Step 1
Brown the butter. In a small saucepan, add the butter and heat it on medium heat until it is brown. Remove it from the heat.
Step 2
In a large bowl, whisk the sugars and butter until a smooth paste forms. Whisk in the egg and vanilla until incorporated into the mixture. Split the mixture in half, separating it into two bowls.
Step 3
In one bowl, fold in the cocoa powder and ¾ cup flour. In the second bowl, fold in the remaining flour. Place both mixtures in the fridge for 20 min (the longer you leave it in the better).
Step 4
Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
Step 5
Remove the dough from the fridge and split the chocolate and the vanilla cookie dough into twelve parts. Grab part of the vanilla and another part of the chocolate and roll them together, creating a swirl/ marble pattern. Flatten it into a cookie shape until it is about a centimetre thick. Place it on the baking sheet and repeat until all the cookies have been made.
Step 6
Bake for 12-15 minutes. Remove from the oven and allow the cookies to cool for 5 minutes. Enjoy
