Classic, Moist Banana Muffins

Do you have some overripe bananas lying around somewhere in your fridge? In that case, you can make these delicious, banana muffins instead of tossing them away. It has a crunchy top with a delicious moist inside that goes so well with our Hot Chocolate. Time: 1 hr 20 min  Serves: 6 cupcakes

Banana Muffins

Ingredients

  1. 2 cups of flour

  2. 1/4 cup white sugar

  3. 1/2 packed cup brown sugar

  4. 1 tsp baking powder

  5. 3/4 cup of oil

  6. 2 eggs

  7. 1 cup of mashed ripe banana (3 medium sized bananas)

  8. 1 tsp vanilla extract

  9. 6 muffin liners


Directions


Step 1

Preheat oven to 350°F (180°C). Mix the flour, sugars, baking powder, oil, eggs and banana in a large bowl. Bring out a muffin pan and line it with muffin liners. Fill each muffin liner with 2 - 3 tablespoons of batter. Then sprinkle a bit of sugar on each muffin to give it a crunchy top.


Step 2

Bake the muffins for about 25 - 30 minutes or until a toothpick that is inserted in the center comes out clean. Allow to cool for about 5 min, or until warm.
