Do you have some overripe bananas lying around somewhere in your fridge? In that case, you can make these delicious, banana muffins instead of tossing them away. It has a crunchy top with a delicious moist inside that goes so well with our Hot Chocolate. Ingredients
2 cups of flour
1/4 cup white sugar
1/2 packed cup brown sugar
1 tsp baking powder
3/4 cup of oil
2 eggs
1 cup of mashed ripe banana (3 medium sized bananas)
1 tsp vanilla extract
6 muffin liners
Directions
Step 1
Preheat oven to 350°F (180°C). Mix the flour, sugars, baking powder, oil, eggs and banana in a large bowl. Bring out a muffin pan and line it with muffin liners. Fill each muffin liner with 2 - 3 tablespoons of batter. Then sprinkle a bit of sugar on each muffin to give it a crunchy top.
Step 2
Bake the muffins for about 25 - 30 minutes or until a toothpick that is inserted in the center comes out clean. Allow to cool for about 5 min, or until warm.
