Here is a delicious meat and potato pie recipe that you can make for a family dinner, during thanksgiving or when ever you feel like having a nice treat.
Time: 2 hours Serves: 8 people
Ingredients
Pie Dough
2 ½ cups all-purpose flour
1 tsp of salt
1 cup cold unsalted butter, cut into 1/2-inch cubes (2 sticks)
4 to 8 tablespoons ice water
Pie Filling
1 cup of corn
1 cup of green beans
3 large Boiled Potatoes
2 &1/2 cups of minced meat
1/2 cup Beef Broth
1 bell pepper
Curry Powder
White Pepper
Salt
Directions
Step 1
Make the pie dough. Combine 2/3 cup of flour and salt in a bowl. Mix it evenly. Add the unsalted butter slowly at a time while mixing it in (with your hands or a wooden spoon). When you have mixed in the butter, add the remaining flour. Sprinkle the dough with 6 - 8 tablespoons of ice, cold water. Then, fold and press (knead)the dough until it comes together into a ball. Use plastic wrap and wrap up the dough. Put the dough into the fridge until ready to use.
Step 2 Cook the minced meat using the instructions on its package. Season it with curry powder and white pepper. When properly cooked pour into a bowl and store it aside.
Step 3
In the same pan, heat up 1/2 cup of beef broth and add in all the vegetables apart from the potatoes. Allow to cook on medium heat. Then dice the potato into tiny chunks and add it into the pan. Allow it to cook for five minutes. Next add in the minced meat from earlier back into the pan cook it it all together for about a minute. Sieve out the beef broth if it is still there and keep the pie filling.
Step 4
Preheat the oven to 400°F (204°C). Grease a medium sized circular pie tin. Bring out the dough from the fridge and remove from the plastic wrap. Then sprinkle the surface with flour and roll out 1/3 of the dough until it is about double the size of the pie tin. Coat the base of the pie tin with the pie dough with the extras hanging off the side. Pour the pie filling into the pie and flatten it so it is even. Use the extra pie dough to cover the top of the pie. Baste the pie with egg whites. Bake in the oven for about 10 - 15 min or until the top is golden in color. Allow to cool, then serve.
