Time:40 minutes Serves:10 people
Ingredients
3 cups of basmati rice
1 cups shrimp
½ cup diced green beans
½ cup corn
½ cup diced carrots
2 large eggs
2 ½ tbsp white pepper
1 ½ tbsp black pepper
2 ½ tbsp Knorr seasoning powder
2 tbsp soya sauce
⅓ of canola oil
Directions
Wash the rice well in warm water.
Boil the rice in a medium sized pot using 4 cups of water on medium heat until it has fully boiled.
While the basmati is boiling, in a medium sized sauce pan, pour in the canola oil and wait for it to heat a little.
Add in the shrimp and season the shrimp with 1 tsp white and black pepper, and knorr seasoning powder and mix. Allow it to cook until light pink.
In a small bowl, crack the eggs and whisk them together with a fork. Then add the whisked egg into the sauce pan with the shrimp and allow it to fry.
When the egg is finished frying, add in all the vegetables to the pan and allow it to cook for 2 min on medium heat (if using frozen veggies, allow to cook until it has cooked fully).
Add in the boiled rice to the sauce pan and mix well. Add in the rest of the seasoning and mix again.
Serve and enjoy!
*tip* This fried rice goes really well with our fried plantain recipe!
