These mini chocolate chip muffins are a delicious dessert made within 35 minutes. The muffins have a nice crunchy top from sugar sprinkled on top and a nice fluffy interior with gooey chocolate chips. These pair so well with our creamy hot chocolate.
Time: 35 minutes Serves: 12 muffins
Ingredients
1¼ cups all-purpose flour
1¼ tsp baking powder
½ cup salted butter softened
¼ cup granulated sugar
¼ cup dark brown sugar
2 large eggs
3 tsp vanilla extract
½ cup milk
⅓ cup milk chocolate chips
Direction
Step 1
Preheat the oven to 350°F (180°C) and line a 12-cupcake pan with cupcake liners.
Step 2
In a medium-sized bowl, mix the flour and baking powder and set it aside
Step 3
Add the butter, sugars, and vanilla into a large bowl and beat it with an electrical whisk on medium speed for about 5 minutes or until light and fluffy. Add the eggs one at a time, whisking each time you add an egg.
Step 4
Reduce the mixer to low speed and add a third of the flour mixture, mixing until well incorporated. Then, add in ¼ cup of milk and mix. Repeat until all the milk and the flour mixture have been incorporated into the main batter, ensuring not to overmix
Step 5
Divide the batter into all the cupcake liners, filling it until it is 2/3 full so it does not overflow. Sprinkle a bit of sugar on the top of each muffin. Bake for 20-25 minutes until the top is light golden brown or until a toothpick is poked and comes out clean.
Step 6
Allow the muffins to cool for 5 minutes, then remove the muffins from the pan and allow to cool fully on a wire rack
