This delicious potato and veggie gravy consists of potatoes, carrots, various colours of bell peppers and green onions. It can be used on rice, mashed potatoes or any thing you would like to give an amazing taste to.
Time: 20 min Serves: 8 people
Ingredients
3 cups beef broth
2 small potatoes (boiled)
1/2 red bell pepper
1/2 green bell pepper
1/2 yellow bell pepper
1/4 cup shredded carrots
1 green onion
1 tsp black pepper
1 tsp white pepper
1 tbsp curry powder
1 Bouillon cube
I tbsp cornstarch diluted into 1/2 cup warm water
Directions
Step 1
Pour the beef broth into a medium sized skillet on medium heat. Allow it to simmer for a bit. Then season it with all the spices (feel free to adjust theses spices o your taste).
Step 2
As the beef broth is simmering, Chop up the bell peppers, boiled potatoes, and green onions. Add it into the beef broth along with the shredded carrots and allow it to cook for about 2 minutes.
Step 3
Turn the heat to low heat and then and the corn starch that is diluted in water into the gravy mix. Allow it to thicken. (if you want a thicker gravy, add more cornstarch, if you would like a more liquid gravy, add less. Turn off he heat and serve
