Egg stew is a great side to lots of foods like rice, plantain and even potatoes. It is fully customizable which is great so you can make it fit your own preferences.
Time: 15 min Serves: 2 people
Ingredients
4 eggs
1 tomato
1 leaf of kale
1 bell pepper
1 tsp black pepper
1 tsp white pepper
2 tsp Knorr seasoning powder
1 tsp curry powder
Oil to fry
2 tbsp of milk
Directions
Chop the kale, bell pepper, and tomato into small chunks
Pour oil into a frying pan and fry the veggies on low heat for about 5 min
Crack the eggs into a bowl and whisk them. Add all the seasonings along with the milk and whisk again.
Pour the egg into the pan and allow it to cook until done (about 2 min)
Once the egg has fried, turn off the heat and serve.
